Pasta Puttanesca

hoochie pasta

2 cans plum tomatoes (I prefer crushed; my mom prefers whole… so it depends on whom you trust more)
1/4 C olive oil
1 tsp. oregano
1/8 tsp. red pepper flakes, more to taste
1/2 C Nicoise or Kalamata olives (I prefer the latter)
1/3 C capers
1/2 C Italian parsley, chopped
2 tsp. salt or less (the capers & olives are a salty combination)
4 garlic cloves, minced
Anchovies (I omit these and so does my mom… but if you want a true pasta puttanesca, add them)

Combine tomatoes and olive oil in a sauce pan. Saute for 5 minutes, or until sauce is hot. Add remaining ingredients. Boil pasta. By the time your pasta is done, so is your sauce. Eat!

  1. try chopping some bell pepper and adding them in. Delicious. Also, if you do cook with anchovies (my personal favorite) cook the olive oil, garlic, capers and anchovies all mashed together first until onions and garlic are translucent. THEN add the tomatos, olives, and peppers. Mmmm.
