green beans with shallots.

This is, hands down, my favorite way to prepare green beans. Normally I use haricots verts, a very thin variety of green bean that’s less starchy and more delicate than the regular variety. As the photo suggests, I opted for a cheaper variety available at Trader Joe’s. Either way, it’s easy to eat a whole plate-full because the dish is so flavorful. Enjoy! lv, molly

French Green Beans

Approx 1/2 lb. thin green beans (haricots verts)
3 tablespoons extra-virgin olive oil
2 teaspoons Dijon mustard
2 teaspoons white wine vinegar
1 tablespoon minced shallot
Salt + pepper to taste

Blanch the green beans briefly in water; let drain.
Whisk the last 5 ingredients in a large bowl, and add the green beans. Toss. Serve. Love.
