The combination of teaching + early-morning-wake-ups requires that I eat quick + healthy breakfasts. Never one to sacrifice taste for convenience, I’ve spent the past month attempting to be as creative as I can at 5 a.m.

Think of this as a top-12 list of breakfasts– a go-to list when you’re in a pinch; you’ve run out of cereal; and you need a good breakfast to start your day off right. Each make-shift recipe offers a good balance of protein and carbs, and each keeps me satiated until I get the chance to eat again– often 5-6 hours later. P.S. You’ll notice that several of these call for Greek Yogurt. My favorite is the 2% plain made by Fage, available at Trader Joe’s. 1 cup has 150 calories and 19 grams of protein!

P.P.S. Some of the recipes are perfect if you have leftovers from the night before (e.g., rice, black beans, sliced fruit, etc.).

1. 1 cup greek yogurt
top with a handful of blackberries (if frozen, defrost)
+ agave nectar
+ chopped walnuts or almonds

2. melt thinly sliced sharp cheddar on slices of whole wheat toast
top with apple slices

3. saute leftover brown rice with sesame oil + soy sauce
add an egg, and stir fry
[One of my old roommates, whose parents are Korean, gave me this idea– it’s delicious!]

4. spread almond butter liberally on whole wheat toast
top with sliced pears + honey

5. quick-cooking oatmeal
top with walnuts, cinnamon, and apple slices

6. toast a whole wheat english muffin
top with a fried egg + avocado
+ a pinch of salt

7. 1 cup 2% greek yogurt
top with apple or banana slices
+ 1 Tbl. agave nectar or strawberry preserves
+ chopped walnuts or almonds

8. whole wheat waffles (I admit… I like Eggos)
top with peanut butter + raisins or fruit

9. warm corn tortilla
fill with a cooked egg white + black beans
+ leftover veggies/ salsa

10. whole wheat waffle
top with light cream cheese + honey

11. whole grain toast with pesto
top with a fried egg

12. egg white sauteed with spinach
sprinkle with salt
